I have long had a love affair with balsamic reduction. From Grilled Watermelon & Balsamic Chicken and Sweet Corn Caprese Pizza to Skinny Mini Strawberry Balsamic Cream Pies, balsamic reduction compliments everything from appetizers to entrees and desserts. It is such a versatile sauce that brings a sweet and tangy twist to the simplest of dishes.
While some people add a form of sugar to their balsamic reduction, usually with honey, I find that it is the perfect balance of tangy sweetness all on it’s own. I like to cook mine down until it is a thick and sweet syrup which gets it sweeter in the end. If you don’t cook it long enough, it will taste too tart for most recipes. Don’t make the mistake that I have far too often though and cook it TOO long. If you let it go past the syrup stage, it will head right into hard candy stage! I have ruined a pot or two, not to mention spoons and utensils when I forgot about the balsamic and it had hardened onto my dishes and it just wouldn’t come off. Woops! After about 30 minutes of reducing the balsamic, it is wise to start keeping a closer eye on it, so you get a perfect consistency.
