How to make Dorito casserole
Grease a 9×13 casserole pan and turn your oven to 350F, then gather the following ingredients for Dorito Veggie Casserole.
Veggie Dorito Casserole Ingredients
Here is what you will need to make this vegetarian Dorito casserole
Olive oil
Red and yellow bell pepper
Small red onion, peeled and sliced
Sweet corn
Cooked rice
Kidney or black beans
Kalamata olives (optional)

Veggie, Rice and Beans
In a deep large skillet over medium-high heat, add a drizzle of olive oil. When the oil is fragrant and shiny, add the diced onions and bell peppers. Sauté for 3-4 minutes, until the vegetables are tender.
Add the corn, rice, beans, olive, salsa and taco seasoning to the pan. Stir and cook for for an additional 2 minutes.


Taco Bake with Doritos
To assemble the Dorito casserole, start with your greased 9X13 pan and layer half of the chips. Top with half of the veggie and rice mixture.
Soften the cream cheese by microwaving it for 30-60 seconds. Spread the cream cheese over the mixture and top with half of the grated Manchego cheese. Alternatively, if you want to make things easier, you can simply mix the cream cheese in with the hot rice and veggie mixture.
Top with the remaining veggie mixture and finish with the remaining Doritos. Top the casserole with the remaining Manchego cheese.
Cover the pan with a tinfoil and bake for 25 minutes at 350F. Remove the foil and bake for an additional 5 minutes until the cheese is nicely browned.


Can I make substitutions?
Yes! Whether you want to swap the kidney beans for black beans, some bell peppers for poblano peppers or white rice for brown rice, the possibilities are endless. Some Smoked Traeger Corn on the Cob would also be a great substitution for fresh corn.
We are obsessed with Manchego and the great flavor it adds to any dish, like this Southwest Chicken Cobb Salad. Sharp cheddar cheese is a good substitution to Manchego in this Dorito casserole.
In addition to substitutions, you can leave out one or two veggies if they aren’t your family’s favorite. Perhaps they aren’t big fans of olives. While they offer a great briny flavor that compliments the rich cheese, you can leave them out. Just don’t eliminate too many vegetables or you will eliminate flavor.
