Tzatziki with Feta
When I lived in Europe I discovered the amazing dish that we all know as Tzatziki. I lived in Germany, right about an authentic little Greek restaurant. I LIVED for their gyros with an extra large helping of the amazing cucumber and Greek yogurt sauce.
Sadly when I go back to visit that little Greek restaurant is no longer there after a tragic fire put them out of business. That means I have to recreate it for myself at home now. This Cucumber Feta Greek Yogurt Dip is my quick and easy version of the classic with a salty cheesy spin.


What should I serve with Tzatziki?
Where you brush some fresh pitas with olive oil and toast them just a bit for a warm bread with the perfect crunchy exterior or take the quick and easy route like I did this time and buy some store bought pita chips. It is an amazing appetizer regardless of what you serve with it.
If you are looking for a healthier option, Crudités is always a great option as well. Fresh cruncy carrots, radishes, bell peppers, snap peas, tomatoes and so many other options are fantastic served with this Cucumber Feta Greek Yogurt Dip.

Why is my cucumber dip runny?
This easy 10 minute dip recipe is very simple, but there is one important step you can’t skip. After you grate your fresh cucumber, be sure to place it in a couple paper towels or wash rag. Squeeze it very tight and wring out any of the excess moisture from the cucumbers.
If you skip this step, the cucumbers will quickly make your Cucumber Feta Dip watery as it rests in the refrigerator. This waters down the flavor and leaves you with a dip too thin for good dunking.
If you want to take it a step further, you can add the salt to your cucumbers after they are grated and leave them rest for 10 minutes. This will draw out additional moisture from the vegetable before you wring them out.
Just be sure to taste your Greek yogurt dip after it is mixed together and salt accordingly, because you will loose some of that salt when you squeeze the water out of the cucumbers.
