Whether you are hosting a Luau or just want some bright tropical flavors for a salad to pair with your grilled steak, shrimp or smoked chicken breast, this Pineapple vinaigrette is perfection!

Healthier Vinaigrette
While the standard ratio for vinaigrettes is 1 part oil to 3 parts vinegar. For this vinaigrette, we wanted to lighten things up, so we added the pineapple juice to make things go further and increased the ration of vinegar to keep it sweet and tangy.
If we stuck to the 3 to 1 ratio, the pineapple juice would dilute the tart vinegar flavor too much. The addition of juice to the vinaigrette helps it go further with less fat and calories, while still dressing your salad nicely with a good pop of flavor.

Salad Recipes for Pineapple Vinaigrette
Here are a few salad idea to pair with this light pineapple salad dressing
Grilled Pineapple Salad: This salad is the perfect side dish to pair with your favorite grilled meats. Add some fresh pineapple to the grill for deeper and sweeter flavor. Add some avocado, blueberries and pistachios for the perfect balance of freshness, crunch and healthy fats.
Tropical Fruit Salad: Combine fresh pineapple, mango, kiwi, and strawberries with shredded coconut and toasted almonds. Drizzle with Pineapple White Balsamic Vinaigrette for a refreshing and delicious fruit salad.
Asian Noodle Salad: Toss cooled soba noodles with shredded carrots, sliced scallions, diced red bell pepper, and chopped cilantro. Top with Pineapple White Balsamic Vinaigrette for a tangy and flavorful salad.
Summer Berry Salad: Combine mixed greens, sliced strawberries, blueberries, and raspberries. Add crumbled goat cheese and toasted pecans. Drizzle with Pineapple White Balsamic Vinaigrette for a sweet and savory salad.

How to make Pineapple Vinaigrette
The best part of this simple vinaigrette recipe is that you can make it in just minutes. Add the following ingredients to a blender or tall glass and blend with an immersion blender.
Olive Oil
Honey
White Balsamic Vinegar
Salt & Pepper
After the vinaigrette is blended, mix in finely chopped shallots. You can blend them with the dressing, but I like the little crunch you get from adding the shallots after.
If you don’t have a blender, you can just give it a quick whisk before serving.


Substitute for white balsamic vinegar
If you don’t have white balsamic vinegar on hand or can’t find it in your local store, there are several substitutes you can use that will still give you a similar flavor. Here are a few options
White Wine Vinegar: This vinegar has a similar flavor profile to white balsamic vinegar and can be used as a substitute in most recipes. It’s a bit sharper than white balsamic, so you may want to add a little less.
Champagne Vinegar: This vinegar has a light, delicate flavor that’s similar to white wine vinegar. This is one of my favorite vinegars and it’s a good substitute for white balsamic vinegar in recipes where you want a mild, subtle flavor.
Balsamic Vinegar: This vinegar has a similar complex flavor but it is a bit sweeter. Add a little less honey when substituting balsamic vinegar.
Rice Wine Vinegar: This vinegar has a mild, slightly sweet flavor and is a common ingredient in Asian cuisine. It can be used as a substitute for white balsamic vinegar in salad dressings, marinades, and sauces.
It’s important to note that while these vinegars can be used as substitutes for white balsamic vinegar, they will alter the flavor of the dressing slightly. Be sure to taste your dressing as you make it and adjust the honey and vinegar as needed to balance the flavors.


What to do with leftover pineapple juice
This pineapple salad dressing is the perfect way to use up some leftover pineapple juice!
I came up with this recipe when I had some leftover pineapple juice from my favorite carrot cake recipe and wanted to put it to good use. I whipped up this simple pineapple white balsamic vinaigrette to go on a light salad for Easter dinner.
Fresh or Canned Pineapple Juice?
While fresh juice is always idea, fresh pineapple juice isn’t the most accessible. We usually use canned pineapple juice as it is what we can get our hands on.
